Grandma (Lavenia Hargett Marsh) was born on the 27th of December in 1914, on the family farm adjoining Feagaville. Feagaville is a small farming community located on Rt. 180 west of Frederick City, prior to Mt. Zion Road.

Grandma rose at 5:00 am, 7 days a week, to help milk cows on their 90-acre dairy farm. She attended a 2-room schoolhouse in Feagaville that was heated by a wood-burning stove. The so-called “little room” in this school was for the 1st, 2nd and 3rd graders and the “big room” housed the 4th through 7th grades. Grandma remembers everyone going outside to take turns pumping the well, so they could have water to wash their hands and water to drink. This building is still actively used today as the Feagaville Community Center.

She learned to cook on a wood burning, kitchen stove. Lavenia graduated from Frederick High School in 1932 and Hood College in 1936 (tuition then was $250 if you lived off campus and $500 per year if you lived on campus). She was a Dietician at the Frederick Memorial Hospital and then taught Home Economics in the Frederick County School System for 21 years.

Speedy Lasagna

MAKES 6 SERVINGS
PREP; 15 MIN., COOK: 40 MIN., STAND: 5 MIN.

You'll need a microwave-safe colander to cook and drain the
sausage for the lasagna. If you don't have one, brown the sausage
on the cooktop, drain, and continue the recipe as directed.

 

bullet1 pound Italian sausage,
casings removed
bullet1 (26-ounce) jar spaghetti sauce with
onions and roasted garlic
bullet1 tablespoon chopped fresh or
    1 teaspoon dried basil
bullet1/2 teaspoon pepper
bullet6 no-cook lasagna noodles
bullet2 cups ricotta cheese
bullet2 cups shredded mozzarella cheese
bullet3/4 cup grated Parmesan cheese

bulletCRUMBLE sausage into a plastic colander; place over large microwave-safe bowl. Microwave at HIGH 1 minute, and stir. Microwave at HIGH 3 to 31/2 minutes more, stirring every 30 seconds, or until sausage is done and no longer pink. Drain well on paper towels. Discard drippings. Rinse and wipe bowl clean.
 
bulletSTIR together sausage, spaghetti sauce, basil, and pepper in large bowl.
 
bulletSPREAD one-third sausage mixture in bottom of a lightly greased 11- x 7-inch microwave-safe baking dish: top with noodles and remaining cheeses and alternate sauce, noodles, and cheeses again. Your family will love this "yummy" hot meal on these cold winter nights.
